Easy meatballs!
I like to use this recipe for meal prep, travel or feeding multiple servings. You can expand these to create multiple meals, on salads, paired with veggies, in wraps, adding to sauce or zucchini pasta. For two people they should last around 3-4 days. You can even make the full amount and freeze half for later! Enjoy!
Ingredients:
ginger turkey meatballs:
1 pound Organic dark meat ground Turkey (light is ok too - dark comes out juicer)
chopped Green Onion
1/2 tbsp Coconut Aminos
1 in grated piece of Ginger root
1/2 bunch of chopped cilantro
1 tbsp Avocado or Olive oil
1/2 tsp salt
lamb meatballs with olives:
1 pound Organic Lamb
6 chopped Kalamata Olives
Fresh chopped Thyme, Rosemerry, Oregano
optional 3 cloves garlic
1 tbsp Avocado or Olive oil
1/2 tsp salt
Steps for both:
1) Preheat oven to 375
2) In a bowl combine meat, all chopped herbs, salt and liquids
3) Mix all ingredients together (I use my hands) until everything is evenly combined.
4) Using hands roll into evenly sized balls on a baking sheet or glass dish
5) Bake for 20-30 minutes until cooked thoroughly.
